Tri colour rice – R Day Special

This was on the eve of Republic day. I thought of making some patriotic dinner. It was just regular dinner, but it turned out so nice with the colours of the flag and all that, that I felt very patriotic.

Nothing fancy. I parboiled sweet corn kernels, boiled carrots and peas and set this aside. I cooked rice seperately.

Heated oil in a deep pan. Added one / two slit green chillies. Added diced onions and fried them well. Turned off the heat. Added the cooked rice and added the boiled veggies. Seasoned it well with pepper and salt. Mix well. Serve. Yummmmmy…
