Yes, I’ve always been a happy baker. This time I tried out my new muffin cups and used my microwave oven in convection mode for the first time, successfully.
I made some very cut looking and yummy tasting banana walnut muffins. And the left over batter went into a cake pan. So we had some cake and some muffins.
Here’s what I had:
3 cups flour
2 ripe bananas mashed well
1/2 cup chopped walnuts
1 cup sugar (If the bananas are really sweet, you wont need too much sugar)
1 1/2 tsp baking powder
1 1/2 tsp baking soda
1 1/2 cups butter.
Cream the butter and sugar together. Add mashed bananas to this mix. Sift the dry ingredients together and add the walnuts. This way, the walnuts will not get stuck in one place. Add the dry ingredients mix to the butter, sugar and banana mixture.
Add vanilla essence.Mix well.
Spoon into muffin cups that have been lightly greased. Pre heat oven to 180 degrees C. Bake for about 30 minutes or till done.
And I also tried baking in microwave mode. The muffins rose very beautifully, but there was no colour or crust. But they tasted wonderful all the same. 🙂
